Organic aquaculture and sustainable seafood 
Fish and seafood is increasingly important for human food consumption. It is seen as healthier as meat and most consumers perceive fish as a product grown in the wild. In comparison to other food categories seafood has entered the organic market with some delay but is catching up quickly in major markets.
Udo Censkowsky, co-founder of Organic Services GmbH, has been part of this development from the early beginning in the mid of the nineteenth. He has been involved in setting up various organic aquaculture projects world-wide, introducing organic seafood products to EU-markets, organizing the Bio-Fish Forum to promote the organic seafood concept and offers training courses for companies interested to learn about the legal requirements when launching organic seafood in EU countries.
